Sausage & Potato Cheddar Casserole

Here’s a comforting and delicious Sausage & Potato Cheddar Casserole recipe—creamy, cheesy, and packed with smoky kielbasa flavor!


Serves: 6-8 | Prep Time: 15 mins | Cook Time: 40 mins

Ingredients:

  • 1 lb kielbasa sausage, sliced into ¼-inch rounds
  • 1 (32 oz) bag frozen hash brown potatoes (shredded or diced)
  • 1 small onion, finely diced
  • 2 cups shredded cheddar cheese (divided)
  • 1 (10.5 oz) can cream of chicken soup (or cream of mushroom)
  • 1 cup sour cream
  • ½ cup milk
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp smoked paprika (optional)
  • Salt & black pepper to taste
  • 2 tbsp butter, melted
  • 1 cup crushed Ritz crackers or panko breadcrumbs (for topping)

Instructions:

Step 1: Preheat & Prep

  1. Preheat oven to 375°F (190°C).
  2. Lightly grease a 9×13-inch baking dish.

Step 2: Cook the Kielbasa

  1. In a skillet over medium heat, cook the kielbasa slices for about 3-4 minutes per side until lightly browned. Set aside.

Step 3: Mix the Casserole

  1. In a large bowl, combine the frozen hash browns, onion, 1½ cups cheddar cheese, cream of chicken soup, sour cream, milk, garlic powder, onion powder, smoked paprika, salt, and pepper. Stir well.
  2. Fold in the browned kielbasa slices.

Step 4: Assemble & Bake

  1. Spread the mixture evenly into the prepared baking dish.
  2. Sprinkle the remaining ½ cup of cheddar cheese on top.
  3. In a small bowl, mix melted butter with the crushed crackers or panko. Sprinkle over the casserole.

Step 5: Bake & Serve

  1. Bake uncovered for 35-40 minutes, or until bubbly and golden brown on top.
  2. Let cool for a few minutes before serving.
