Golden Crisp Salmon Cakes

Makes about 8 patties

Ingredients:

For the Patties:
  • 1 (14-15 oz) can salmon, drained and flaked (or 1½ cups cooked fresh salmon)
  • ½ cup breadcrumbs (panko or regular)
  • ¼ cup finely diced onion
  • 2 tbsp chopped fresh parsley (or 1 tsp dried)
  • 1 tsp Dijon mustard
  • ½ tsp Old Bay seasoning (or paprika + a pinch of cayenne)
  • ½ tsp garlic powder
  • 1 large egg, lightly beaten
  • 1 tbsp mayonnaise
  • 1 tbsp lemon juice
  • 1 tbsp Worcestershire sauce
  • Salt & pepper to taste
  • 2 tbsp oil (for frying)
For the Lemon Herb Sauce (Optional):
  • ½ cup Greek yogurt or mayo
  • 1 tbsp lemon juice
  • 1 tsp Dijon mustard
  • ½ tsp garlic powder
  • 1 tbsp chopped fresh dill or parsley
  • Salt & pepper to taste

Instructions:

Step 1: Prepare the Patties

  1. In a large bowl, combine the salmon, breadcrumbs, onion, parsley, Dijon mustard, Old Bay, garlic powder, egg, mayo, lemon juice, and Worcestershire sauce.
  2. Mix until well combined, then form into 8 small patties. If the mixture is too wet, add a little more breadcrumbs.

Step 2: Cook the Patties

  1. Heat oil in a large skillet over medium heat.
  2. Cook the patties for about 3-4 minutes per side, or until golden brown and crispy.
