Ingredients

For the Filling:

  • 1 ½ lbs (680g) ground beef (or lamb for a traditional twist)
  • 1 tbsp olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 medium carrots, diced
  • 1 cup frozen peas
  • 2 tbsp tomato paste
  • 1 tbsp Worcestershire sauce
  • 1 cup (240ml) beef broth
  • 1 tsp dried thyme (or fresh)
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 tbsp all-purpose flour (to thicken)

For the Mashed Potato Topping:

  • 2 lbs (900g) potatoes, peeled and cubed
  • 4 tbsp unsalted butter
  • ½ cup (120ml) milk
  • ½ cup (50g) shredded cheddar cheese (optional, for extra richness)
  • Salt & pepper to taste

Instructions

1. Prepare the Mashed Potatoes

  • Boil potatoes in salted water for 15-20 minutes until fork-tender.
  • Drain and mash with butter, milk, salt, and pepper.
  • Stir in cheese (if using). Set aside.

2. Cook the Meat Filling

  • In a large skillet, heat olive oil over medium heat.
  • Sauté onions, garlic, and carrots until softened (about 5 minutes).
  • Add ground beef and cook until browned, breaking it apart with a spoon. Drain excess fat if needed.
  • Stir in tomato paste, Worcestershire sauce, thyme, salt, and pepper.
  • Sprinkle flour over the mixture and stir.
  • Pour in beef broth and simmer for 5-7 minutes until thickened.
  • Stir in peas, then remove from heat.

3. Assemble & Bake

  • Preheat oven to 400°F (200°C).
  • Spread the meat filling evenly in a 9×13-inch baking dish.
  • Spoon the mashed potatoes on top and spread smoothly with a spatula.
  • Use a fork to create texture on the surface (helps create crispy edges).

4. Bake & Serve

  • Bake for 25-30 minutes, until golden brown and bubbling.
  • Let cool for 5 minutes before serving.
