Here’s a delicious recipe for Golden Muffins with a Strawberry Heart—fluffy, buttery muffins with a sweet strawberry jam center!

Ingredients

For the Muffins:

  • 1 ¾ cups (220g) all-purpose flour
  • ½ cup (100g) granulated sugar
  • 2 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • ½ cup (120ml) unsalted butter, melted
  • ½ cup (120ml) milk
  • 2 large eggs
  • 1 tsp vanilla extract

For the Strawberry Heart Filling:

  • ½ cup (120g) strawberry jam
  • 1 tbsp cornstarch (optional, to thicken if jam is too runny)

Instructions

  1. Preheat & Prep
    • Preheat your oven to 375°F (190°C).
    • Line a muffin tin with paper liners or grease well.
  2. Mix Dry Ingredients
    • In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  3. Mix Wet Ingredients
    • In a separate bowl, whisk melted butter, milk, eggs, and vanilla until smooth.
  4. Combine
    • Gradually mix wet ingredients into the dry ingredients. Stir gently until just combined (don’t overmix).
  5. Fill the Muffin Cups
    • Fill each muffin cup about halfway with batter.
    • Add a teaspoon of strawberry jam in the center of each.
    • Cover with more batter until about ¾ full.

    • Bake for 18-22 minutes or until golden and a toothpick (inserted at the edge) comes out clean.
