Ingredients:
- 4-6 boneless, skinless chicken breasts or thighs
- 1 large onion, chopped

- 1 cup chicken broth
- 1 cup heavy cream
- 1/4 cup all-purpose flour

Instructions:
- Sear the Chicken: Heat a large skillet over medium-high heat. Season the chicken with salt and pepper. Sear the chicken pieces on all sides until golden brown.
- Layer Ingredients: Place the seared chicken in the bottom of the crockpot. Add the chopped onion, carrots, celery, and garlic. Sprinkle with thyme and rosemary.
- Add Broth: Pour the chicken broth over the chicken and vegetables.

- Combine and Simmer: Remove the chicken from the crockpot and shred it using two forks. Return the shredded chicken to the crockpot. Stir in the flour-cream mixture. Cook on low for an additional 15-20 minutes, or until the gravy has thickened.
