Southern Pecan Cobbler

Yields: 8-10 servings Prep Time: 20 minutes Cook Time: 45-55 minutes

Ingredients:

For the Filling:

  • 1 cup light corn syrup
  • 1/2 cup granulated sugar
  • 1/2 cup (1 stick) unsalted butter, melted
  • 2 large eggs, lightly beaten
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 2 cups chopped pecans

For the Cobbler Topping:

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup (1 stick) cold unsalted butter, cut into small pieces
  • 1/2 cup milk

Equipment:

  • 9×13 inch baking dish
  • Mixing bowls
  • Measuring cups and spoons
  • Pastry blender or fork
  • Spatula

Instructions:

  1. Prepare the Filling:
    • Preheat oven to 350°F (175°C).
    • In a large bowl, whisk together the corn syrup, sugar, melted butter, eggs, vanilla extract, and salt until well combined.
    • Stir in the chopped pecans.
    • Pour the filling into the 9×13 inch baking dish.
  2. Prepare the Cobbler Topping:
    • In a separate bowl, whisk together the flour, sugar, baking powder, and salt.
    • Cut in the cold butter using a pastry blender or fork until the mixture resembles coarse crumbs.
    • Stir in the milk until just combined. Do not overmix.
  3. Assemble the Cobbler:
    • Drop spoonfuls of the cobbler topping evenly over the pecan filling. It doesn’t have to be perfectly even; the irregular shapes will add to the rustic charm.
  4. Bake:
    • Bake for 45-55 minutes, or until the topping is golden brown and the filling is bubbly.
  5. Cool and Serve:
    • Let the cobbler cool slightly before serving.
    • Serve warm, preferably with a scoop of vanilla ice cream or a dollop of whipped cream.

Tips and Variations:

  • Toasted Pecans: Toast the pecans in a dry skillet over medium heat for a few minutes to enhance their flavor.
  • Spice it up: Add a pinch of cinnamon or nutmeg to the filling or topping for extra warmth.
  • Caramel Drizzle: Drizzle caramel sauce over the cobbler before serving for added richness.
  • Bourbon or Rum: Add a tablespoon of bourbon or rum to the filling for an extra layer of flavor.
  • Brown Sugar: Substitute some of the granulated sugar in the filling with brown sugar for a deeper molasses flavor.
  • Ice Cream: Vanilla ice cream is the classic pairing, but caramel or butter pecan ice cream would also be delicious.

Enjoy your warm and comforting Southern Pecan Cobbler!
