Slow Cooker Beef Tips & Gravy

This easy, comforting dish features tender beef tips simmered in a rich, savory gravy—perfect over mashed potatoes, rice, or egg noodles!

Ingredients:

  • 2 lbs beef stew meat or sirloin tips, cut into bite-sized pieces
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 2 cups beef broth
  • 2 tbsp Worcestershire sauce
  • 1 tbsp soy sauce (adds depth of flavor)
  • 1 tbsp tomato paste (optional, for richness)
  • 1 tsp salt (adjust to taste)
  • 1/2 tsp black pepper
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1/2 tsp smoked paprika (optional)
  • 1/2 tsp dried thyme or Italian seasoning
  • 1 tbsp cornstarch + 2 tbsp water (for thickening)
  • 2 tbsp butter (for extra richness)
  • 1/2 cup heavy cream (optional, for a creamy version)
  • Egg Noodles (amount depends on preference)

Instructions:

1️⃣ Sear the Beef (Optional, but Recommended)

  • Heat a skillet over medium-high heat, add a little oil, and sear the beef tips for 2-3 minutes per side until browned. Transfer to the slow cooker.

2️⃣ Prepare the Slow Cooker

  • Add the diced onion, minced garlic, beef broth, Worcestershire sauce, soy sauce, tomato paste, salt, pepper, onion powder, garlic powder, paprika, and thyme to the slow cooker. Stir well.

3️⃣ Slow Cook

  • Cover and cook on LOW for 6-8 hours or HIGH for 3-4 hours until the beef is tender.

4️⃣ Thicken the Gravy

  • In a small bowl, mix 1 tbsp cornstarch with 2 tbsp cold water until smooth.
  • Stir the cornstarch slurry into the slow cooker.
  • Add butter for extra richness. Cover and cook for another 15-20 minutes until the gravy thickens.

5️⃣ Prepare the Egg Noodles

About 15 minutes before the beef tips are done, bring a pot of water to a boil. Cook the egg noodles according to the package instructions, then drain and set aside.

6️⃣ Make It Creamy (Optional)

  • If you want a creamy gravy, stir in 1/2 cup heavy cream before serving.

  • Garnish with fresh parsley if desired.
