Makes: 12 rolls
Prep Time: 20 minutes (plus 2-3 hours rising time)
Bake Time: 20-25 minutes
Ingredients
For the Dough:
- 3 ½ cups all-purpose flour (or bread flour)
- 2 ¼ tsp (1 packet) active dry yeast
- ¼ cup warm milk (110°F or 45°C)
- ¼ cup granulated sugar
- 1 tsp salt
- 4 large eggs
- ½ cup unsalted butter, softened (cut into small cubes)
For the Egg Wash:
- 1 egg
- 1 tbsp milk
For the Buttery Glaze (Optional but Recommended):
- 2 tbsp unsalted butter, melted
- ½ tsp honey (optional)
Instructions
1. Activate the Yeast
- In a small bowl, mix warm milk, yeast, and 1 tsp sugar. Let it sit for 5-10 minutes until foamy.
2. Make the Dough
- In a large mixing bowl, combine flour, remaining sugar, and salt.
- Add the yeast mixture and eggs, mixing until a sticky dough forms.
- Knead (by hand or with a stand mixer fitted with a dough hook) for about 5 minutes until smooth.
- Gradually add butter, one cube at a time, fully incorporating it into the dough. Knead for another 8-10 minutes until the dough is elastic and slightly sticky.
3. First Rise
- Transfer the dough to a lightly greased bowl, cover with a kitchen towel, and let it rise in a warm place for 1.5 to 2 hours, or until doubled in size.
4. Shape the Rolls & Second Rise
- Punch down the dough and divide it into 12 equal pieces. Shape each piece into a smooth ball and place them on a lined baking sheet or in a buttered 9×13-inch pan.
- Cover loosely with plastic wrap or a towel and let rise again for 45 minutes to 1 hour until puffy.
5. Bake
- Preheat oven to 375°F (190°C).
- Brush the rolls with the egg wash for a golden, glossy finish.
- Bake for 20-25 minutes, or until golden brown.
6. Finish with Buttery Glaze
- While warm, brush the tops with melted butter and honey (if using) for extra shine and flavor.
