Georgia Peach Loaf

Ingredients

  • 1 ½ cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 tsp cinnamon
  • ½ cup unsalted butter, softened
  • ¾ cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ cup sour cream or Greek yogurt
  • 1 ½ cups fresh peaches, peeled and diced
  • ½ cup chopped pecans (optional)

Glaze (Optional)

  • ½ cup powdered sugar
  • 1-2 tbsp milk
  • ½ tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon. Set aside.
  3. In a large mixing bowl, beat butter and sugar until light and fluffy.
  4. Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
  5. Mix in sour cream (or Greek yogurt) until combined.
  6. Gradually add the dry ingredients, mixing until just combined.
  7. Gently fold in diced peaches and pecans (if using).
  8. Pour batter into the prepared loaf pan and spread evenly.
  9. Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
  10. Let the loaf cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  11. If using the glaze, whisk together powdered sugar, milk, and vanilla, then drizzle over the cooled loaf.
  12. Slice and enjoy!
