Ingredients:
For the Cookie Base:
- 1 cup all-purpose flour
- 1 tsp baking powder
- ¼ tsp salt
- ¼ cup unsalted butter, softened
- ¼ cup granulated sugar
- 1 large egg
- ½ tsp vanilla extract
- ¼ cup milk
For the Vanilla Custard Filling:
- ¾ cup whole milk
- 2 tbsp granulated sugar
- 1 tbsp cornstarch
- 1 egg yolk
- ½ tsp vanilla extract
- ½ tbsp unsalted butter
For the Chocolate Glaze:
- ½ cup semi-sweet chocolate chips
- 2 tbsp heavy cream
- ½ tbsp unsalted butter
Instructions:
Step 1: Make the Cookie Base
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a small bowl, whisk together flour, baking powder, and salt. Set aside.
- In a mixing bowl, beat butter and sugar until light and fluffy. Add egg and vanilla, mixing well.
- Gradually add the dry ingredients, alternating with milk, until combined.
- Drop rounded teaspoons of batter onto the baking sheet, spacing them 2 inches apart.
- Bake for 8-10 minutes or until lightly golden. Let cool on a wire rack.
Step 2: Prepare the Custard Filling
- In a small saucepan over medium heat, whisk milk, sugar, and cornstarch.
- In a separate bowl, whisk the egg yolk. Slowly add a few tablespoons of the warm milk mixture to temper the yolk, then return everything to the saucepan.
- Cook until thickened, stirring constantly (about 2-3 minutes). Remove from heat, add vanilla and butter, and let cool.
Step 3: Make the Chocolate Glaze
- In a microwave-safe bowl, heat chocolate chips, heavy cream, and butter in 15-second intervals, stirring in between, until smooth.
Step 4: Assemble the Boston Gold Bites
- Spoon a small amount of custard onto the flat side of one cookie, then top with another cookie.
- Drizzle or dip the tops in the chocolate glaze.
- Let set for a few minutes before serving.
