Boston Gold Bites

Ingredients:

For the Cookie Base:
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • ¼ tsp salt
  • ¼ cup unsalted butter, softened
  • ¼ cup granulated sugar
  • 1 large egg
  • ½ tsp vanilla extract
  • ¼ cup milk
For the Vanilla Custard Filling:
  • ¾ cup whole milk
  • 2 tbsp granulated sugar
  • 1 tbsp cornstarch
  • 1 egg yolk
  • ½ tsp vanilla extract
  • ½ tbsp unsalted butter
For the Chocolate Glaze:
  • ½ cup semi-sweet chocolate chips
  • 2 tbsp heavy cream
  • ½ tbsp unsalted butter

Instructions:

Step 1: Make the Cookie Base

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a small bowl, whisk together flour, baking powder, and salt. Set aside.
  3. In a mixing bowl, beat butter and sugar until light and fluffy. Add egg and vanilla, mixing well.
  4. Gradually add the dry ingredients, alternating with milk, until combined.
  5. Drop rounded teaspoons of batter onto the baking sheet, spacing them 2 inches apart.
  6. Bake for 8-10 minutes or until lightly golden. Let cool on a wire rack.

Step 2: Prepare the Custard Filling

  1. In a small saucepan over medium heat, whisk milk, sugar, and cornstarch.
  2. In a separate bowl, whisk the egg yolk. Slowly add a few tablespoons of the warm milk mixture to temper the yolk, then return everything to the saucepan.
  3. Cook until thickened, stirring constantly (about 2-3 minutes). Remove from heat, add vanilla and butter, and let cool.

Step 3: Make the Chocolate Glaze

  1. In a microwave-safe bowl, heat chocolate chips, heavy cream, and butter in 15-second intervals, stirring in between, until smooth.

Step 4: Assemble the Boston Gold Bites

  1. Spoon a small amount of custard onto the flat side of one cookie, then top with another cookie.
  2. Drizzle or dip the tops in the chocolate glaze.
  3. Let set for a few minutes before serving.
