Prep Time: 15 minutes
Rest Time: 1 hour
Cook Time: 12-15 minutes

Ingredients

For the Dough

  • 2 ½ cups all-purpose flour (plus extra for dusting)
  • 1 tsp salt
  • 1 tsp sugar
  • 1 tsp baking powder
  • 1 packet (2 ¼ tsp) instant yeast
  • ¾ cup warm water (about 110°F/45°C)
  • 2 tbsp olive oil

For the Filling

  • 1 tbsp olive oil (plus more for skillet)
  • 3 green onions (scallions), finely chopped
  • 1 cup fresh spinach, finely chopped (or ½ cup thawed frozen spinach, well-drained)
  • 2 cloves garlic, minced (optional for extra flavor)
  • Salt & pepper to taste
  • ¼ tsp crushed red pepper flakes (optional)

Instructions

1. Prepare the Dough

  1. In a large mixing bowl, whisk together flour, salt, sugar, baking powder, and yeast.
  2. Add warm water and olive oil. Stir to combine into a shaggy dough.
  3. Transfer to a floured surface and knead for about 5-7 minutes until smooth and elastic.
  4. Place dough in a lightly oiled bowl, cover, and let rise for about 1 hour, or until doubled in size.

2. Prepare the Filling

  1. Heat 1 tbsp olive oil in a skillet over medium heat.
  2. Add green onions and garlic (if using) and sauté for 1 minute.
  3. Add spinach, season with salt, pepper, and red pepper flakes if desired. Cook just until wilted (or warmed through if using frozen).
  4. Remove from heat and let cool slightly.

3. Assemble & Cook

  1. Once dough has risen, punch it down and divide into 2 equal portions.
  2. Roll each piece into a thin circle (about ¼ inch thick).
  3. Spread the spinach and onion mixture over one piece of dough.
  4. Place the second piece of dough on top, pinching the edges to seal, forming a stuffed bread.
  5. Heat a large cast iron or nonstick skillet over medium heat with a drizzle of olive oil.
  6. Place the stuffed bread in the skillet and cook for 5-7 minutes per side, until golden brown and cooked through.

4. Serve

  • Slice into wedges.
  • Serve warm with yogurt, tzatziki, or a drizzle of garlic butter.

Optional Add-ins

  • Crumbled feta or goat cheese inside for extra creaminess.
  • Fresh herbs like dill, parsley, or basil.
  • Sprinkle sesame seeds on top before cooking for extra texture.

Tips

  • You can also bake this at 400°F (200°C) for 12-15 minutes if you prefer.
  • Make smaller individual flatbreads if serving as appetizers.
