Garlic Pane Piatto

Ingredients

For the Dough:

  • 3 cups all-purpose flour (plus extra for dusting)
  • 1 packet (2 ¼ tsp) active dry yeast
  • 1 cup warm water (110°F/45°C)
  • 1 tsp sugar
  • 1 ½ tsp salt
  • 2 tbsp olive oil

For the Garlic Topping:

  • 4 cloves garlic (finely minced or grated)
  • 3 tbsp olive oil
  • 2 tbsp unsalted butter (optional for richness)
  • 1 tbsp chopped fresh parsley
  • 1 tsp dried oregano (optional)
  • Pinch of sea salt
  • Freshly cracked black pepper (optional)

Optional Garnish:

  • Grated Parmesan or Pecorino cheese
  • Chili flakes

Instructions


1. Activate the Yeast

  1. In a small bowl, combine warm water, sugar, and yeast. Stir gently and let sit for 5-10 minutes until frothy.

2. Make the Dough

  1. In a large mixing bowl, combine flour and salt.
  2. Add yeast mixture and olive oil to the flour.
  3. Mix until a shaggy dough forms, then knead on a floured surface for 8-10 minutes until the dough is soft and smooth.
  4. Place dough in a lightly oiled bowl, cover with a clean towel, and let rise for 1 hour, or until doubled in size.

3. Prepare the Garlic Oil

  1. In a small saucepan, heat olive oil (and butter, if using) over low heat.
  2. Add minced garlic and sauté gently for about 1-2 minutes (just until fragrant, not browned).
  3. Stir in parsley, oregano, salt, and pepper.
  4. Remove from heat and set aside.

4. Shape & Cook the Flatbreads

  1. Preheat a large skillet (cast iron works great) over medium heat, or preheat oven to 450°F (230°C) if baking.
  2. Divide dough into 6-8 pieces and roll each piece into a thin oval or round (about ⅛ inch thick).
  3. Brush one side with garlic oil.
  4. If pan-cooking, place the oiled side down onto the hot skillet. Cook for 2-3 minutes until bubbles form. Brush the top with more garlic oil, then flip and cook another 2 minutes until golden.
  5. If baking, place flatbreads on a parchment-lined baking sheet, brush with garlic oil, and bake for 6-8 minutes until golden and slightly puffed.

5. Serve

  • Brush with any remaining garlic oil.
  • Sprinkle with Parmesan, chili flakes, or extra parsley if desired.
  • Serve warm alongside pasta, dips, or soups.

Tips & Variations

  • Add a sprinkle of rosemary for extra herby flavor.
  • Use roasted garlic instead of fresh for a mellow, sweet garlic twist.
  • Add dollops of ricotta or crumbled feta for a cheesy version.
