Loaded Beef & Cheese Potato Patties

These crispy, golden potato patties are stuffed with seasoned beef and gooey cheese, making them the perfect comfort food. Great for a snack, appetizer, or main dish!


Ingredients:

For the Potato Mixture:

  • 3 large russet potatoes, peeled and cubed
  • 2 tbsp butter
  • 1/4 cup milk
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 cup flour (for binding)
  • 1 egg, beaten

For the Beef Filling:

  • 1/2 lb ground beef
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 1/2 tsp cumin (optional for extra flavor)
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 cup diced onion
  • 1 clove garlic, minced
  • 1 tbsp tomato paste
  • 1/4 cup shredded cheddar cheese (or mozzarella for a gooey center)

For Coating & Cooking:

  • 1/2 cup flour
  • 2 eggs, beaten
  • 1 cup breadcrumbs (panko or regular)
  • Oil for frying

Instructions:

Step 1: Prepare the Potatoes

  1. Boil the potato cubes in salted water until fork-tender (about 15 minutes). Drain and mash.
  2. Add butter, milk, salt, pepper, garlic powder, and onion powder. Mix until smooth. Let cool slightly.
  3. Stir in flour and the beaten egg for binding. Set aside.

Step 2: Make the Beef Filling

  1. In a skillet over medium heat, cook the ground beef until browned. Drain excess grease.
  2. Add onion and garlic, cooking for another 2 minutes. Stir in tomato paste, paprika, cumin, garlic powder, and onion powder. Cook for 1-2 minutes. Remove from heat and mix in the shredded cheese. Let cool slightly.

Step 3: Assemble the Patties

  1. Take a scoop of mashed potato mixture (about ¼ cup) and flatten it in your palm.
  2. Place 1 tablespoon of beef filling in the center. Fold the potato mixture over and shape it into a patty, sealing the edges. Repeat for all patties.

Step 4: Coat & Fry

  1. Dredge each patty in flour, dip into beaten eggs, then coat with breadcrumbs.
  2. Heat oil in a skillet over medium heat. Fry the patties for 2-3 minutes per side, until golden brown and crispy. Drain on a paper towel.

Serving Suggestions:
