Herb Butter Mushroom & Cheese Chicken

This juicy, golden-brown chicken is stuffed with a rich mixture of garlic butter mushrooms and melty cheese, then seared and baked to perfection. Perfect for a restaurant-quality meal at home!


Ingredients:

For the Chicken:

  • 2 large chicken breasts, butterflied (sliced in half but not all the way through)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 1/2 tsp Italian seasoning
  • 1 tbsp olive oil

For the Herb Butter Mushroom Filling:

  • 1 tbsp butter
  • 1 cup mushrooms, finely chopped (button, cremini, or portobello)
  • 2 garlic cloves, minced
  • 1/2 tsp Italian seasoning
  • 1/4 tsp red pepper flakes (optional, for a little heat)
  • 1 tbsp fresh parsley, chopped
  • 1/2 cup shredded mozzarella (or Swiss, Gouda, or provolone)
  • 1/4 cup Parmesan cheese, grated

For the Garlic Herb Butter Sauce:

  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1 tsp garlic, minced
  • 1/2 tsp Italian seasoning
  • 1 tbsp fresh parsley, chopped

Instructions:

Step 1: Prepare the Filling

  1. In a skillet, melt butter over medium heat. Add chopped mushrooms and cook for 4-5 minutes, until softened.
  2. Stir in garlic, Italian seasoning, red pepper flakes (if using), and fresh parsley. Cook for 1 minute until fragrant. Remove from heat and let cool.
  3. Once cooled, mix in mozzarella and Parmesan cheese. Set aside.

Step 2: Stuff the Chicken

  1. Butterfly each chicken breast and season both sides with salt, pepper, paprika, and Italian seasoning.
  2. Spoon the mushroom & cheese filling into each chicken breast. Secure with toothpicks to keep the filling inside.

Step 3: Sear the Chicken

  1. Heat olive oil in a large oven-safe skillet over medium heat.
  2. Sear the stuffed chicken breasts for 3-4 minutes per side, until golden brown.

Step 4: Make the Herb Butter Sauce & Bake

  1. In a small bowl, mix melted butter, olive oil, garlic, Italian seasoning, and parsley.
  2. Brush the sauce over the seared chicken, then transfer the skillet to a preheated 375°F oven.
  3. Bake for 15-20 minutes, until the chicken is cooked through (internal temp 165°F).

Step 5: Serve & Enjoy!

  1. Let the chicken rest for 5 minutes, then remove toothpicks.
  2. Serve with mashed potatoes, roasted veggies, or a fresh salad.
