Ingredients:
For the Chicken:
- 2 large chicken breasts, butterflied (sliced in half but not all the way through)
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp paprika
- 1/2 tsp Italian seasoning
- 1 tbsp olive oil
For the Herb Butter Mushroom Filling:
- 1 tbsp butter
- 1 cup mushrooms, finely chopped (button, cremini, or portobello)
- 2 garlic cloves, minced
- 1/2 tsp Italian seasoning
- 1/4 tsp red pepper flakes (optional, for a little heat)
- 1 tbsp fresh parsley, chopped
- 1/2 cup shredded mozzarella (or Swiss, Gouda, or provolone)
- 1/4 cup Parmesan cheese, grated
For the Garlic Herb Butter Sauce:
- 2 tbsp butter
- 1 tbsp olive oil
- 1 tsp garlic, minced
- 1/2 tsp Italian seasoning
- 1 tbsp fresh parsley, chopped
Instructions:
Step 1: Prepare the Filling
- In a skillet, melt butter over medium heat. Add chopped mushrooms and cook for 4-5 minutes, until softened.
- Stir in garlic, Italian seasoning, red pepper flakes (if using), and fresh parsley. Cook for 1 minute until fragrant. Remove from heat and let cool.
- Once cooled, mix in mozzarella and Parmesan cheese. Set aside.
Step 2: Stuff the Chicken
- Butterfly each chicken breast and season both sides with salt, pepper, paprika, and Italian seasoning.
- Spoon the mushroom & cheese filling into each chicken breast. Secure with toothpicks to keep the filling inside.
Step 3: Sear the Chicken
- Heat olive oil in a large oven-safe skillet over medium heat.
- Sear the stuffed chicken breasts for 3-4 minutes per side, until golden brown.
Step 4: Make the Herb Butter Sauce & Bake
- In a small bowl, mix melted butter, olive oil, garlic, Italian seasoning, and parsley.
- Brush the sauce over the seared chicken, then transfer the skillet to a preheated 375°F oven.
- Bake for 15-20 minutes, until the chicken is cooked through (internal temp 165°F).
Step 5: Serve & Enjoy!
- Let the chicken rest for 5 minutes, then remove toothpicks.
