Country-Style Breakfast Enchiladas

For the Enchiladas:

  • 8 flour tortillas (soft taco size)
  • 1 lb breakfast sausage (pork or turkey)
  • 8 large eggs
  • 1/4 cup milk
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1 cup shredded cheddar cheese (or a blend)
  • 1/2 cup shredded Monterey Jack cheese
  • 2 tbsp butter

For the Sausage Gravy:

  • 1/2 lb breakfast sausage (reserved from above)
  • 2 tbsp butter
  • 1/4 cup all-purpose flour
  • 2 cups whole milk (or half-and-half for extra creaminess)
  • 1/2 tsp black pepper
  • 1/2 tsp salt (adjust to taste)
  • 1/4 tsp cayenne pepper (optional for a kick)

Instructions:

Step 1: Cook the Sausage & Eggs

  1. In a large skillet over medium heat, cook the breakfast sausage, breaking it apart until fully browned. Drain excess grease, reserving about ½ lb for the gravy.
  2. In a separate bowl, whisk together eggs, milk, salt, pepper, garlic powder, and onion powder.
  3. Melt butter in a pan over medium heat, then add the egg mixture. Cook, stirring occasionally, until the eggs are just set. Remove from heat and mix in the cooked sausage and 1/2 cup of cheddar cheese.

Step 2: Assemble the Enchiladas

  1. Preheat oven to 350°F and grease a 9×13-inch baking dish.
  2. Divide the sausage and egg mixture evenly among the tortillas. Roll them up tightly and place seam-side down in the baking dish.

Step 3: Make the Sausage Gravy

  1. In a skillet, melt butter over medium heat. Add the reserved cooked sausage and stir in flour, cooking for about 1-2 minutes until lightly browned.
  2. Gradually whisk in milk, stirring constantly, until the gravy thickens (about 5 minutes). Add salt, black pepper, and cayenne (if using).

Step 4: Bake & Serve

  1. Pour the sausage gravy over the enchiladas, then top with remaining cheddar and Monterey Jack cheese.
  2. Bake for 20 minutes, or until the cheese is melted and bubbly.
  3. Garnish with chopped green onions, crumbled bacon, or parsley, if desired.
