For the Enchiladas:
- 8 flour tortillas (soft taco size)
- 1 lb breakfast sausage (pork or turkey)
- 8 large eggs
- 1/4 cup milk
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1 cup shredded cheddar cheese (or a blend)
- 1/2 cup shredded Monterey Jack cheese
- 2 tbsp butter
For the Sausage Gravy:
- 1/2 lb breakfast sausage (reserved from above)
- 2 tbsp butter
- 1/4 cup all-purpose flour
- 2 cups whole milk (or half-and-half for extra creaminess)
- 1/2 tsp black pepper
- 1/2 tsp salt (adjust to taste)
- 1/4 tsp cayenne pepper (optional for a kick)
Instructions:
Step 1: Cook the Sausage & Eggs
- In a large skillet over medium heat, cook the breakfast sausage, breaking it apart until fully browned. Drain excess grease, reserving about ½ lb for the gravy.
- In a separate bowl, whisk together eggs, milk, salt, pepper, garlic powder, and onion powder.
- Melt butter in a pan over medium heat, then add the egg mixture. Cook, stirring occasionally, until the eggs are just set. Remove from heat and mix in the cooked sausage and 1/2 cup of cheddar cheese.
Step 2: Assemble the Enchiladas
- Preheat oven to 350°F and grease a 9×13-inch baking dish.
- Divide the sausage and egg mixture evenly among the tortillas. Roll them up tightly and place seam-side down in the baking dish.
Step 3: Make the Sausage Gravy
- In a skillet, melt butter over medium heat. Add the reserved cooked sausage and stir in flour, cooking for about 1-2 minutes until lightly browned.
- Gradually whisk in milk, stirring constantly, until the gravy thickens (about 5 minutes). Add salt, black pepper, and cayenne (if using).
Step 4: Bake & Serve
- Pour the sausage gravy over the enchiladas, then top with remaining cheddar and Monterey Jack cheese.
- Bake for 20 minutes, or until the cheese is melted and bubbly.
- Garnish with chopped green onions, crumbled bacon, or parsley, if desired.
