Lemon Roasted Potatoes

Lemon roasted potatoes are a delightful and easy side dish that brings a bright, tangy flavor to any meal. Here’s a recipe that captures the essence of this classic:

Ingredients:

  • 2 pounds potatoes (Yukon Gold, red potatoes, or any roasting potato), cut into roughly equal-sized chunks
  • 1/4 cup olive oil
  • 1/4 cup fresh lemon juice
  • 2-3 cloves garlic, minced
  • 1-2 teaspoons dried oregano
  • Salt and freshly ground black pepper, to taste
  • Optional: fresh parsley or dill, chopped, for garnish

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 400°F (200°C).  
  2. Prepare the Potatoes:
    • Wash and cut the potatoes into uniform chunks. This helps them cook evenly.
    • In a large bowl, combine the potatoes, olive oil, lemon juice, minced garlic, oregano, salt, and pepper. Toss well to ensure the potatoes are evenly coated.
  3. Roast the Potatoes:
    • Spread the potatoes in a single layer on a baking sheet. Avoid overcrowding the pan, as this will prevent the potatoes from browning properly.  
    • Roast for 30-45 minutes, or until the potatoes are tender and golden brown. Flip the potatoes halfway through the cooking time to ensure even browning.
  4. Garnish and Serve:
    • Once the potatoes are cooked, remove them from the oven.
    • If desired, garnish with fresh parsley or dill.
    • Serve immediately.

Tips and Variations:

  • Crispier Potatoes: For extra crispy potatoes, you can increase the oven temperature to 425°F (220°C) for the last 10-15 minutes of cooking.
  • Adding Broth: Some recipes use chicken or vegetable broth to create a slightly softer, more tender potato. If you prefer this, add 1/2 cup of broth to the baking sheet before roasting.  
  • Lemon Zest: Adding lemon zest to the potato mixture will intensify the lemon flavor.
  • Garlic Lovers: Add more garlic to your personal taste.
  • Herbs: feel free to use other herbs, such as rosemary, or thyme.
