Flavor-Packed Street Corn Chicken Rice Bowl

Ingredients

For the Chicken:

  • 2 boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 1 tsp cumin
  • ½ tsp smoked paprika
  • ½ tsp garlic powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • Juice of 1 lime

For the Street Corn:

  • 2 ears of corn (or 1 ½ cups frozen corn)
  • 1 tbsp butter
  • ¼ cup mayonnaise
  • ½ tsp chili powder
  • ¼ tsp smoked paprika
  • ½ tsp garlic powder
  • ½ cup crumbled cotija cheese (or feta)
  • Juice of ½ lime
  • 2 tbsp chopped cilantro

For the Rice Bowl:

  • 2 cups cooked rice (white, brown, or cilantro-lime rice)
  • ½ cup black beans, drained and rinsed
  • ½ avocado, sliced
  • ¼ cup cherry tomatoes, halved
  • 2 tbsp sour cream (optional)
  • Extra lime wedges for serving

Instructions

Step 1: Prepare the Chicken

  1. In a bowl, mix olive oil, chili powder, cumin, smoked paprika, garlic powder, salt, pepper, and lime juice.
  2. Coat the chicken breasts with the spice mixture and let marinate for at least 15 minutes.
  3. Grill over medium-high heat for 5-7 minutes per side or until cooked through (internal temp of 165°F).
  4. Let rest for 5 minutes, then slice into strips.

Step 2: Make the Street Corn

  1. If using fresh corn, grill or pan-sear the corn on high heat until slightly charred. If using frozen corn, sauté in butter until warmed through and slightly caramelized.
  2. In a bowl, mix the corn with mayonnaise, chili powder, smoked paprika, garlic powder, cotija cheese, lime juice, and chopped cilantro.

  1. Divide cooked rice into serving bowls.
