For the Chocolate Mousse Layer:

  • 1 cup semi-sweet chocolate chips
  • 2 tbsp powdered sugar
  • 1 tsp vanilla extract

For the Whipped Topping:

  • 1 cup heavy cream
  • 2 tbsp powdered sugar
  • 1 tsp vanilla extract

For Garnish (Optional):

  • Chocolate shavings or cocoa powder
  • Chopped nuts or crushed cookies
  • Drizzle of chocolate or caramel sauce

Instructions

Step 1: Prepare the Brownie Layer

  1. If making homemade brownies, bake and let them cool completely before cutting into squares.
  2. Line a loaf pan or square dish with plastic wrap or parchment paper for easy removal.
  3. Arrange a layer of brownie squares at the bottom, pressing them down slightly.
  4. Brush the brownies lightly with milk to keep them soft and moist.

Step 2: Make the Chocolate Mousse

  1. Heat ½ cup of heavy cream in a saucepan until warm (do not boil).
  2. Remove from heat and stir in the chocolate chips until melted and smooth. Let it cool slightly.
  3. In a separate bowl, whip the remaining ½ cup of heavy cream with powdered sugar and vanilla extract until soft peaks form.
  4. Gently fold the whipped cream into the melted chocolate mixture to create a light mousse.

Step 3: Assemble the Layers

  1. Spread half of the chocolate mousse over the brownie layer.
  2. Add another layer of brownies, brushing them with milk.
  3. Spread the remaining chocolate mousse evenly on top.
  4. Repeat with a final layer of brownies if desired.

Step 4: Make the Whipped Topping

  1. Whip the heavy cream, powdered sugar, and vanilla extract until soft peaks form.
  2. Spread over the top of the cake for a creamy finish.

Step 5: Chill and Serve

  1. Cover and refrigerate for at least 4 hours, preferably overnight, to allow the flavors to meld.
  2. Before serving, garnish with chocolate shavings, nuts, or a drizzle of chocolate sauce.
  3. Slice and enjoy this Brownie Refrigerator Cake chilled!
