Instructions
Step 1: Prepare the Brownie Layer
- If making homemade brownies, bake and let them cool completely before cutting into squares.
- Line a loaf pan or square dish with plastic wrap or parchment paper for easy removal.
- Arrange a layer of brownie squares at the bottom, pressing them down slightly.
- Brush the brownies lightly with milk to keep them soft and moist.
Step 2: Make the Chocolate Mousse
- Heat ½ cup of heavy cream in a saucepan until warm (do not boil).
- Remove from heat and stir in the chocolate chips until melted and smooth. Let it cool slightly.
- In a separate bowl, whip the remaining ½ cup of heavy cream with powdered sugar and vanilla extract until soft peaks form.
- Gently fold the whipped cream into the melted chocolate mixture to create a light mousse.
Step 3: Assemble the Layers
- Spread half of the chocolate mousse over the brownie layer.
- Add another layer of brownies, brushing them with milk.
- Spread the remaining chocolate mousse evenly on top.
- Repeat with a final layer of brownies if desired.
Step 4: Make the Whipped Topping
- Whip the heavy cream, powdered sugar, and vanilla extract until soft peaks form.
- Spread over the top of the cake for a creamy finish.
Step 5: Chill and Serve
- Cover and refrigerate for at least 4 hours, preferably overnight, to allow the flavors to meld.
- Before serving, garnish with chocolate shavings, nuts, or a drizzle of chocolate sauce.
- Slice and enjoy this Brownie Refrigerator Cake chilled!
