Ingredients:
- 2 lbs boneless, skinless chicken thighs (or chicken breasts)
- ½ cup honey
- ¼ cup low-sodium soy sauce
- ¼ cup ketchup
- 4 cloves garlic, minced
- 1 tbsp rice vinegar (or apple cider vinegar)
- 1 tsp sesame oil (optional, for extra flavor)
- ½ tsp black pepper
- 1 tsp ginger, grated (optional)
- 1 tbsp cornstarch + 2 tbsp water (for thickening)
- 1 tbsp sesame seeds (for garnish)
- 2 tbsp green onions, chopped (for garnish)
Instructions:
- Prepare the Sauce: In a small bowl, whisk together honey, soy sauce, ketchup, minced garlic, rice vinegar, sesame oil, black pepper, and ginger.
- Add to Slow Cooker: Place the chicken thighs in the slow cooker and pour the sauce over them, ensuring they’re well coated.
- Cook: Cover and cook on low for 6-7 hours or high for 3-4 hours, until the chicken is tender and easily shreddable.
