Fluffy M&M Frosting

Ingredients:

  • 1 cup (2 sticks) unsalted butter, softened
  • 4 cups powdered sugar
  • 2 tbsp heavy cream or milk (more as needed)
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1/2 cup mini M&M’s (or regular M&M’s, chopped)
  • Optional: Food coloring (if you want to match specific colors)

Instructions:

  1. Prepare the buttercream base: In a large mixing bowl, beat the softened butter with a hand mixer or stand mixer on medium speed until creamy and smooth, about 2-3 minutes.
  2. Add powdered sugar: Gradually add the powdered sugar, about 1/2 cup at a time, beating well after each addition. Start on a lower speed to prevent a powdered sugar cloud. Once all sugar is added, increase the speed to medium-high and beat for another 3-5 minutes until light and fluffy.
  3. Add liquids: Add the vanilla extract, salt, and heavy cream (or milk). Mix on low speed until combined, then increase speed and beat for another 1-2 minutes. If the frosting is too thick, add more milk, a tablespoon at a time, until you reach your desired consistency. If it’s too thin, add a bit more powdered sugar.
  4. Fold in the M&M’s: Gently fold in the mini M&M’s using a spatula or on low mixer speed. If you want more color or candy crunch, you can mix in additional M&M’s.
  5. Optional: Add food coloring: If you’re using food coloring to match a theme or create a specific color, add it at this stage and mix until evenly distributed.
  6. Use or store: Once your M&M frosting is fluffy and ready, spread it on cakes, cupcakes, or cookies! If you’re not using it immediately, you can store it in an airtight container in the refrigerator for up to a week. Just re-whip it before use if it firms up in the fridge.
